Chicken Basil with Roasted Garlic Pepper & Tomatoes

This is a quick and simple recipe that is nutritious and heathy.

chicken Basil with Roasted Garlic Pepper & Tomato

Prep Time: 10 minutes

Servings: 5

Ingredients:

5- free range chicken breasts

3 garlic cloves minced or crushed

1 yellow, red or orange Bell Pepper

1 small onion

sea salt

1 bunch of basil leaves chopped

2 teaspoons of Extra-Virgin Coconut Oil or Extra Virgin Olive Oil

Directions:

Cut up bell pepper, tomato, onion bulb and garlic

Saute garlic in oil and add pepper, tomato, and onion, set aside.

Wash chicken breast and pat dry.

Place chicken breasts with the outer breast facing down in 9×13″ pan

Sprinkle with little dash of sea salt over each piece

Add Basil to the sauteed pepper, onion, and tomato and mix

Pour mixture evenly over chicken

Cover tightly with lid or foil and cook for 50 mins on 375F.

Serve with salad and whole grain brain.

I made this recipe on a Friday Night with a side dish of rice and it was awesome. Thanks Duong!! I love trying new things.

That sounds wonderful and easy to put together. Do you think adding a cayenne pepper to the mix would be good? Or a jalpeno? I love to spice things up a bit.

You can add anything you’d like to this recipe. I’ve jazzed it up w/diff spices, but this is most easiest for most people, anyone can do…even if you don’t cook much! :) Let me know how your recipe turns out!
